Why do products that have been shipped with CO2 sometimes have an off flavor?

Occasionally a "carbonated flavor" will be noticed in products that have been shipped with CO2. This is typically due to a break in the cold chain while the product is still in its sealed packaging, causing accelerated respiration by the product itself. If the temperature and the CO2 level remain too high for extended periods, an "off" or "carbonated flavor" might be detected. This will usually disappear with 24 hours after removing the product from the packaging. If products held in MAP are handled correctly throughout the cold chain, you should not experience this effect.
